Due to a significant drop in demand for local, home grown beef last year, we tightened our belts and did not hold back as many animals for this year.
However, we do have some! It will be available starting end of June.
We are taking orders now. We ask that in light of shortages, our customers please request only what you need for your family in order that we can help as many people as possible.
We are working to get more of our animals ready for butcher in order to ensure supply.
CCC does reserve the right to limit orders and we commit to not raising prices in order to take advantage of the current crisis.
Hanging Weight vs. Finished Weight
We have seen many people selling beef with a different pricing structure than what we use and I just want to help inform you how it works. We see many people sell per pound by the "Hanging weight" then add the cost of processing ...and that's fine, but you need to know what that means.
The "Hanging Weight" is the weight of the animal after the head, skin and internal organs have been removed, which is usually around 63% of the Hoof (or live) weight. Hanging weight prices are determined by this stage in the packaging process...but this is not the end of the process.
After hanging (curing) for a few weeks, it is then further processed to your particular cuts: bones, fat trimmings and dry spots (resulting from hanging for 2-3 weeks) are removed and you are left with your meat. If you are paying by the hanging weight, your price includes those bones and fat trimmings that are thrown away during this part of the process.
Example: 1200 lbs steer yields a 750lb. carcass at "Hanging Weight." Paying $3.50/lb hanging weight plus processing (which averages $175/quarter) you are paying:
750lb hanging weight
x $3.50/lb = $2625 for the whole animal
/ 4 = $656.25 for a quarter beef
+ $175 (processing fee per quarter)
= $831.25 for one quarter beef, or approximately 120 lbs of meat. That's $6.92/lb. for the meat that goes into your freezer.
Our quarters start at $730 for a quarter of our grain finished beef.
